St. George Botanivore is distilled with 19 botanicals, layering juniper, bay laurel and fresh coriander in the botanicals basket while angelica, bergamot peel, black peppercorn, caraway, cardamom, cinnamon, citra hops, dill seed, fennel seed, ginger, lemon peel, lime peel, orris, Seville orange peel and star anise steep overnight in the copper pot still. The name says it all: this is a garden in a glass. GinSchool discovery: citra hops lend bright, almost tropical citrus and a faint resinous bitterness — a fascinating left-field botanical to weave into your own bill.
