Sears “Cutting Edge Gin” earns its name literally: the makers cut their fresh botanicals with razor-sharp knives, claiming this preserves the plants' cell structure so flavour is revealed more cleanly in distillation. Bottled at 44% with juniper at its core, it's a gin built around method as much as recipe. Whatever you make of the theory, fresh-cut botanicals are worth experimenting with when you build your own bill.
