Conceived above the Portobello Star bar at 171 Portobello Road, where Ged Feltham and Jake Burger built their Ginstitute — London's second-smallest museum, home to a tiny working copper pot still named Coppernicus. From a bar-side hobby grew one of London's best-loved dry gins, founded on a classic juniper backbone and a blend of single-botanical distillates. The clean, piney juniper is the hero botanical every gin you build begins with.
