This Swiss gin from nginious! is made by distilling its botanicals separately in batches and then blending them, before the spirit is double-aged in 225-litre casks that first held Cocchi Barolo and later Cocchi vermouth. The cask work wraps the juniper-led base in vinous, bittersweet warmth. Cask-finishing is a lovely trick to borrow — a way to give your own gin a layered, vermouth-kissed depth.
