Jinzu gin

Launched in 2014, Jinzu was the brainwave of English bartender Dee Davies, who won Diageo's Show Your Spirit competition with it. A British gin with a Japanese twist, it infuses juniper, coriander and angelica in neutral grain spirit in a copper pot still, then adds yuzu and cherry blossom just before distillation, with junmai sake blended in afterwards. The cherry blossom brings a soft, perfumed delicacy, a beautiful hero for anyone building a floral gin of their own.
