Hammer & Son sets out to revive an old, lightly sweetened English style — the Old Tom of its day. It's distilled at Langley Distillery on a John Dore copper still named Angela, the oldest gin still in use, to an eleven-botanical recipe dating to 1783. Ten are known — juniper, coriander, lemon, orange, angelica, cassia, liquorice, cinnamon, orris and nutmeg — with cardamom distilled separately by founder Henrik Hammer. Cardamom is the one to handle with care: distil it on its own and you control its dominant, fragrant warmth.
