A small-batch Belgian gin from De Moor Distillery in Aalst, redistilled with twenty-three botanicals in a Holstein copper pot still. Alongside juniper sit coriander, angelica, cinnamon, orris root, cassia, cardamom, liquorice, star anise, lemon peel, orange peel, cubeb pepper, grains of paradise, lavender, hops, gentian, nutmeg, yarrow, rosemary, cloves, ginger, carob and blessed thistle. Peppery and aromatic, cubeb pepper is a hero botanical to reach for when you want a spicy, resinous lift in your own bill.
