A collaboration between Victoria Distillers and the Fairmont Empress Hotel in British Columbia, this gin gets its dramatic indigo hue from butterfly pea blossom, which shifts colour with pH. Alongside juniper, a blend of black tea served at the Empress Hotel adds a soft tannic backbone. Colour-changing and gently floral, butterfly pea blossom is a showstopping hero botanical to make your own gin sing in the glass.
