From Headlands Distilling Co., Daalgaal is crafted by infusing the distillery's boobialla gin with native illawarra plum over six months, then delicately sweetening it with native stingless bee honey to form a gin-based elixir. Think of it as an authentically Australian answer to a British sloe gin — floral, with a luxurious mouthfeel. The illawarra plum is a hero botanical to reach for when you want to make your own gin sing with native fruit.
